Okonomiyaki literary means 'cook what you like', and you can really cook as you wish at okonomiyaki-ya (okonomiyaki restaurant) which can be found throughout Japan. You sit around a table in which teppan (a black iron hotplate) is placed, then the waiter or waitress ask you what kind of okonomiyaki you want to eat. Examples of the menu are "mikkusu okonomiyaki" (mixed fillings of seafood, meat and vegetables) and "modan-yaki" (okonomiyaki with fried eggs). After take an order of you, he / she bring you a bowl filled with the ingredients. He / she turns on the hot plate and expect you to cook it for yourself. 1) Mix the batter and filling 2) Pour the mixture onto the hotplate when it is hot enough. 3) Flatten it like pancake using a spatula. 4) Flip it with the spatula and cook the other side. You need experience to find out when to flip it and when to turn off the hotplate. 5) Season with Worcestershire-flavored sauce, mayonnaise and soy sauce. 6) Sprinkle with "aonori"(green seaweed powder) and "katsuo bushi" (dried bonito shavings) It might sounds difficult to cook okonomiyaki, but please don't mind so much. Just glimpse the people cooking at the next table or ask the waiter / waitress to help you cook it. They are willing to help you. Monjayaki is similar to okonomiyaki.
