Noodles (Soba, Udon and Ramen)



Soba is made with buckwheat noodles, taro root, egg whites etc.
Udon is made from wheat dough and it is usually served with
a hot soy-sauce flavored broth.
You can eat soba and udon at Sobaya (Soba shop), restaurants
or "tachigui shop" (stand-up counter) at stations. You have
to stand while eating at such a shop but you are served very
quickly and cheaper than you eat at restaurants.

Ramen is originally comes from the Chinese lao-men, a kind of
Chinese noodle. Ramen is the popular Chinese noodle served in
Japan and great amount of ramen shops are found throughout Japan.
It has soy-sauce based soup (shouyu ramen), salt based soup
(shio ramen) and miso based soup (miso ramen).
Each rame shop uses individual ingredients and has its
own method of making ramen.

Popular Soba
Kake Soba
Simple soba in a hot soy-sauce based broth.

Mori Soba
After boiling and rinsing in water, arrange soba on
the bamboo dish. Dip it in soy-sauce based cold soup and eat.

Zaru soba
Almost same with mori soba. Only the difference is after
being arranged, "kizami nori" thinly sliced dried seaweed
are place on the top of soba.

Kitsune Soba
Soba topped with "abra age" (fried slices of tofu)

Kani ramen

prefecture


Konnyaku ramen
Noodle made of Konnyaku. It is quite low calorie and
recommended for the persons who are on the diet.


Rice ramen
Noodle made of rice. It has different taste from usual ramen and
is sold at only one place in Niigata prefecture.


Kaisou ramen
Ramen topped with wakame (kind of seaweeds). Found in Awa
Island, Niigata prefecture


Gekikara ramen
Ramen with very spicy soup


2-hour ramen
People coming from all over Japan to eat this ramen. Ingredients
are kept secret. It open only between 12:00 noon to 2 pm.
Found in Futami city, Sado Island.
